carrots, zucchini, squash, mushrooms and napa cabbage all sliced into matchstick sized portions (3" long). the rice paper was soaked in room temp water (20 seconds each side or until very flexible). lay out the rice paper and pile the veggies in the middle. i just used lemon pepper to season but there are other options using rice wine vinegar and sugar (not my thing). You can add shrimp or chicken to add protein. Roll them up by alternate sides and eat. they will be a little tacky to the touch
